Mint & Pea Mash

The trick to this delicious side dish is to use fresh peas that are in season. The coconut oil adds sweetness and mint adds freshness. Pair with fish or poultry.


MINT & PEA MASH

Gluten-Free, Plant-Based, Vegan


INGREDIENTS

  • 2 cups of fresh peas

  • 1 T coconut oil

  • 2 T fresh mint, chopped

  • sea salt & fresh black pepper to taste

  • basil seeds, garnish


INSTRUCTIONS

  1. In a cast-iron skillet, saute peas with coconut oil until they soften.

  2. Mash peas and combine with remaining ingredients.

  3. Finish with sea salt & basil seeds.
